Mealtime Monday: Pesto Chicken Lasagna Roll-Ups

Happy Monday!  This week I am sharing a new recipe we just tried out that I found while browsing Pinterest. I slightly adapted the recipe from Damn Delicious for pesto chicken roll-ups and found them to be to die for!!  So good!  So cheesy!  So creamy!!  Simply good home cooked comfort food.

  • 8 lasagna noodles
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 1/2 cups shredded chicken breast
  • 15-ounces ricotta cheese
  • 1 cup pesto
  • 2 cups grated mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 jar marinara sauce
  • Salt and pepper to taste

The first step it to make a butter cream sauce.  According to the recipe I followed this sauce is called béchamel. In a skillet over medium-high heat, melt the butter.

Add flour, whisking to incorporate.

Continue whisking for about 1 minute, to lightly toast.

Slowly add milk and continue whisking while it simmers and reduces.  Should be thickened in about 3-4 minutes.  Make sure to stir frequently to keep it from burning.

Spread about 1/2 a cup into the bottom of the glass baking dish and set aside.

Next, boil your lasagna noodles in lightly salted water.  Cook them until softened, but not mushy.  About 1-2 minutes less time than per the instructions on the box.

Meanwhile, prepare the filling for the roll-ups. In a medium sized bowl, add together shredded chicken, ricotta, pesto, and 1 cup of the mozzarella. Season with salt and pepper to taste.

Mix together until fully incorporated.

Lay out all the lasagna noodles and add a generous amount of filling down the center of each.  I did not measure out the filling, I just added a bit to each noodle until it was all allocated.

Roll each noodle and place into the baking dish lined with béchamel.

Top with a generous drizzle of béchamel.  I did not use all the sauce that this recipe made because I did not want it to get too rich.

Next, top with marinara sauce.  I used just over 1/2 the bottle on top of my roll-ups.

And finally, top with mozzarella and parmesan cheese.

Bake in the oven at 375 degrees for about 25 minutes, or until warm throughout and browned on top.

YUM!  Allow to cool for a few minutes before serving so it is easier to serve, if you can.  I was so excited and it smelled so good I could not wait!

To serve, pour some of your remaining marinara sauce on a plate.  Remove one roll and place it on the bed of marinara.  Now take a deep breath and imagine yourself and a fine Italian restaurant.

Mealtime Monday: Green Grilled Cheese

Happy Mealtime Monday!  After taking a week off the blog I am back.  This time of the year is so busy with parties and birthdays for us, I can’t seem to find enough hours in the day to get it all done.  So this week I am sharing a really easy weeknight meal.  This is the green grilled cheese that I got inspired to make from here.  It is a great alternative for an “adult” grilled cheese sandwich, complete with pesto, avocado, spinach and mozzarella.

  • Sliced sourdough bread
  • Butter
  • Fresh spinach leaves
  • Avocado
  • Pesto (click here for my homemade pesto recipe)
  • Sliced mozzarella cheese
  • Optional: Tomato soup

Once all the ingredients are prepped, like in the picture above, it is time to make the sandwiches.  Melt a small piece of butter in a large skillet over medium-high heat. Take one side of bread for each sandwich and slather with a generous amount of pesto.  Place it pesto side up in the pan.

Add a layer of sliced mozzarella cheese on top of the pesto.

Next add a layer of spinach leaves.

Top with sliced avocados.  I used half an avocado per sandwich.

Then finish with a second layer of mozzarella cheese.

Lay the second piece of bread in top.  Cook until golden brown on the first side.

Flip, adding a bit more butter and brown the second side.  Now the bread is nice and crispy and the cheese is melty.

Cut in half and serve.  I like to have my grilled cheese with a bowl of tomato soup.  Such a great winter meal and so easy.  Enjoy!

Mealtime Monday: Pesto Sausage Flatbread Pizza

Back again for another mealtime monday!  This week I am sharing a simple recipe that we like to bring in the mix from time to time.  Back when we lived in San Francisco, our favorite pizza was the pesto sausage from Amici’s.  Now that we can’t walk over and pick one up, we came up with an easy recipe for a pesto sausage flatbread pizza.

Preheat oven to 400°.  Roll out your pizza dough on a greased baking sheet.  Pop into the oven and bake for 7 minutes.  By partially baking the dough before topping you will get a crisper crust.

Meanwhile, cook sausage in a large skillet over medium-high heat.

Remove pizza crust from the oven.  Spread a thin layer of homemade pesto over the entire surface.

Top with cooked sausage and grated cheeses.

Return to the oven and bake for an additional 7-9 minutes or until browned and crisp.

Cut into pieces and serve.  So simple and delicious; a great weeknight meal!

Mealtime Monday: Pesto Sliders

Happy Monday!  For this week’s Mealtime Monday, I am sharing some great and simple tomato, Parmesan pesto sliders with a recipe from Cooking Light.  YUM!

  • Ground beef
  • Tomatoes
  • Parmesan Cheese
  • Pesto (I like using homemade)
  • Slider Bun ( I used King’s Hawaiian rolls)
  • Salt
  • Pepper

Step 1: Start off with placing your raw ground beef into a bowl.  Season with salt and pepper an mix together.

Step 2: Roll meat into small balls.  I was using 1/2 a package of ground beef and wanted to make 6 sliders, so I simply divided my meat into 6 balls and the size worked out perfectly.

Step 3: Flatten the balls to make slider meat patties.  Place into a skillet over medium-high heat.  Cook for about 3 minutes on each side or until desired done-ness.

Step 4:  Prepare rolls (aka cut in half).

Step 5: Slather on a nice dollop of pesto to the bottom of each bun.

Step 6: Top with a slice of a nice juicy red tomato.

Step 7: Now top that with the meat patty and a couple slices of Parmesan cheese.

Step 8: Enjoy.  Great for dinner or as an appetizer for a get-together.

Mealtime Monday: Pesto Chicken & Shrimp Skewers

Welcome back to Mealtime Monday.  Almost two months in and I haven’t missed one yet!  This time I am sharing a delicious little creation inspired by SkinnyTaste.  Gina has a recipe for pesto shrimp kabobs that is super simple, so I decided to do a twist on it adding chicken, veggies and my homemade pesto.  Pair with some pilaf rice, YUM!

Sausage Pesto Pinwheels

I like to call these Sausage Pesto Pinwheels, delicious rolls of yummy goodness!  They are super easy to make and always a hit and any party.  The idea came to me this year when trying to decide what to take to a New Years party.  I saw a few pinwheel recipes but nothing jumped out at me that sounded good and cheese free (our friend hosting the party hates cheese,  I love it!)  So I grabbed two ingredients we like, sausage and pesto, and there we have it!
