To continue on with the theme this week of my favorite cookie recipes, I just had to share this peanut butter cup cookies recipe from Real Simple. It is definitely one of my favorites. I mean biting into a warm cookie with gooey peanut butter cups throughout, so amazing!
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 12-ounce package small peanut butter cups, coarsely chopped
Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper. This helps make the cookies easy to remove.
In a mixing bowl, whisk together flour, baking soda, and salt. Set bowl with dry ingredients aside. In a second bowl, cream the butter and sugars with an electric mixer. Add your egg and vanilla and beat to combine. Slowly add the flour mixture, combining until just incorporated. Gently fold in the peanut butter cup pieces.
Drop tablespoon size mounds of dough approximately 2 inches apart onto the baking sheets lined with parchment paper.
Bake for 12-15 minutes, or until lightly browned around the edges. Cool on a wire baking rack. These cookies are so good!! Enjoy!
